Beet Hemp (Borscht) dip with broccoli for dinner tonight. 🥦🌶
I've been having the version if this delicious vegetable/greens dish for the past couple of months and love it!
Recipe:
1 mid size beet, peeled and roughly chopped
1 mid size zucchini, peeled and roughly chopped
3-4 red mini bell peppers
2 pitted dates or 2 tbsp maple syrup
Juice of 1 mid size lime
1 garlic clove
1 heaping tsp unpasteurized miso paste
1 tbsp hemp seed, plus pinch for garnish.
Blend in Vitamix until smooth. Use as dip or dressing over a salad or zucchini noodles. ❤💚
Try carrots instead of beets and ginger in addition to garlic.

If you have access to Asian grocery store or just produce stand check it out you might find entire boxes of ripe fragrant korean melon ready to be enjoyed! While at that, check if they also have frozen #durian! I got both yesterday and duruan is already gone 😂

Taste and texture like nothing I've tried before. Sweet, delicious, very fragrancy and perfumy! And so very different. It's hard to describe. It doesn't taste like any other durian or fruit for that matter.

👉 Pro tip from someone who grew up in Russia, and we Russians love our beets! Make sure your beets are really, really dark, red color! 🍷🍷🍷 Those are the sweet beets used for extracting sugar. They are delicious raw or cooked and don't have that earthy, dirt-like taste as the light colored, barely red beets do, which were used as livestock feed and don't taste that great when eaten raw!
